Old Geezers Missouri Rub!

You can create your own Rub. Use any combination and amount you want. Measurements are rounded. Use as a guide, adjust to your taste. Make it mild, Cajun, Tex-mex, brain melting hot, candy sweet, Italian or even oriental. These seasonings can be adapted your taste. I personally don't use all the ingredients listed at lest not all at once. I do use many however and change up according to mood, taste or meat. I like mine with attitude. So extra ghost pepper powder. Play with it, Create your own rub. !......


  • ¼ cup brown sugar
  • ¼ cup (smoked) paprika,
  • 4 tbsp. salt sea, kosher, etc. (don't use iodized salt).

Those first three are base ingredients. These are for flavor:

  • 1 tbsp. black pepper,
  • 1 tbsp. chili powder,
  • 1 tbsp. garlic powder,
  • 1 tbsp. onion powder,
  • 1 tsp cayenne, jalapeno, habanero or ghost pepper powder.
  • 1 tsp mustard powder,
  • 1 tsp cumin,
  • 1 tbsp. celery salt or tbsp. ground celery seed,
  • 1 tsp oregano,
  • 1 tsp thyme,
  • 1/2 tbsp. ground cloves,
  • ½ tsp rosemary, (1 tbsp. sage with pork or foul), (add mint with lamb)
  • 1 tsp ginger,
  • 1 tsp white pepper,
  • 2 tsp cinnamon,
  • 1 tbsp. allspice,
  • 1 tsp coriander,
  • 1 tsp ground bay leaves,
  • 1 tsp msg (optional).
  • 2 tbsp. cocoa,
  • 2 tbsp. fresh fine ground coffee,
  • 2tbsp curry,


Add a tbsp. of corn starch to prevent caking. Blend real well keep in a mason jar. Give it a few days to Let the ingredients get and used to each other and blend... Enjoy.
